Tamale Pie Recipe
This is my go to recipe for "MY" version of my moms tamale pie. Super easy and yummy.
My family loves it and with a few extra minutes in the morning you can have dinner prepped and ready for the oven when you get home.
OK here's what you need:
Las Palmas or any enchilada sauce
cheese (Cheddar)
favorite meat. ( I use chicken and ground beef)
veggies (corn and or green beans)
Olives (optional)
onion (optional)
Jiffy cornbread box (Make as instructed)
Pour enchilada sauce at the bottom of the baking pan
add meat chicken, turkey or ground beef. tofu or cheese is a great substitution also
layer now, add veggies on top, onions ect or what ever you think sounds delicious
a layer of cheese on top. and pour some more enchilada sauce on top (for moisture)
then pour the cornbread on top and smooth out.
Like a blanket on top. Add a little extra cheese and olives.
Bake for 35 min at 300.
yummy.....
pair with a salad and some frijole!!!!
if you do prepare in the morning DO NOT put the cornbread on top until right before you put it in the oven.
OK so the BEST part about this meal is the PRICE!!!!
the whole meal is under $20 bucks and will last you well into the next day for leftovers!!!!!

cheese (Cheddar) $ 1.50 about 8 oz
favorite meat. ( I use chicken and ground beef) $ 3-5 lb of ground beef lean is the most expensive
veggies (corn and or green beans) $ 2.00 each bag
Olives (optional) $1
onion (optional) $ 1 only need half of one
Jiffy cornbread box (Make as instructed) .64 cents a box ( \I usually use 2 boxes) $1.28
SIDES:
Beans: $1.00
Salad: $2.00
Total:
$15.78
